    • a pinch of ajinomoto (MSG) for extra umami (use sparingly)
    • or 1 teaspoon massaman/green/red curry paste for a fusion finishing glaze (add 1–2 tablespoons coconut milk or water if needed)
  • Optional finishing: sesame seeds, sliced green onion, soy sauce or tamari (if you have it)

Step-by-step method

  1. Rinse and cook the rice
    • Rinse 1 cup sushi rice under cold water until the runoff is clear. Drain and let sit 15–30 minutes if you have time (improves texture).
    • Cook with 1 1/4 cups water in a rice cooker or on the stove. If using stove, bring to a simmer covered, reduce to low and cook 12–14 minutes, then rest 10 minutes off heat with the lid on.
  2. Make sweet sushi seasoning
    • While rice cooks, gently warm 3 tablespoons rice vinegar, 2 tablespoons sugar, and 1/2 teaspoon salt until sugar dissolves. Keep warm but do not boil.
  3. Season the rice
    • Transfer hot cooked rice to a wide bowl or wooden hangiri if you have. Pour the warm vinegar mixture over the rice and fold with a cutting motion to mix while fanning to cool slightly. This creates shiny sweet sushi rice. Set aside and keep covered with a damp towel.
  4. Caramelize carrot and celery
    • Heat 1 tablespoon oil and optional 1 tablespoon butter in a skillet over medium heat.
    • Add the matchstick carrot and celery and stir for 1–2 minutes. Sprinkle 1–2 tablespoons sugar (or honey) and a pinch of salt. Stir continuously until vegetables soften and turn glossy and slightly caramelized, 3–5 minutes. Add a splash (1–2 teaspoons) of water if they begin to stick.
    • Optional seasoning choices:
      • Umami boost: stir in 1/4 teaspoon chicken bone broth powder dissolved in a teaspoon of water, or a small pinch of ajinomoto, or a sprinkle of chicken salt. Taste and adjust—these are concentrated.
      • Fusion curry glaze: stir in 1 teaspoon curry paste and 1–2 tablespoons coconut milk or water. Simmer 1–2 minutes until the mixture becomes a thick sweet glaze. If you add curry paste, reduce sugar slightly to keep balance.
    • Remove from heat and set aside.
  5. Make sweet tamagoyaki (rolled omelette)
    • Beat 3 eggs with 1 teaspoon sugar and a pinch of salt until just combined. For a slightly savory note you can add 1/2 teaspoon soy sauce instead of some salt.
    • Heat a nonstick omelette pan or small frying pan over medium-low and lightly oil it.
    • Pour a thin layer of egg, tilt to coat the pan. When the egg is mostly set but still slightly glossy, roll it gently to one side of the pan with a spatula. Re-oil the empty pan area, pour another thin layer, lift the rolled egg so the new layer flows under it, let set, then roll again. Repeat until all egg is used. This creates layered tamagoyaki.
    • Remove and rest a minute, then slice into ribbons or bite-sized pieces.
  6. Assemble the bowls
    • Place a serving of seasoned sushi rice into bowls or on plates.
    • Top with a nest of caramelized carrot and celery.
    • Add sliced tamagoyaki on top or to the side.
    • Finish with optional sesame seeds, sliced green onion, and a light drizzle of soy sauce or a sprinkle of chicken salt if desired.
  7. Serve
    • Enjoy warm or at room temperature. The sweet-salty interplay and glossy rice make a comforting oriental-style dish that feels like a sweet savory treat.

Variations & tips

  • If you want it sweeter, add a little more sugar to the sushi vinegar or drizzle honey on the finished vegetables.
  • For a stronger umami savory depth, add a very small pinch of ajinomoto or a teaspoon of chicken bone broth powder while cooking the veggies—taste as you go.
  • For a Thai-inspired sweet-curry version, use 1 teaspoon curry paste and 1–2 tablespoons coconut milk when glazing the veggies; finish with a squeeze of lime if available.
  • Tamagoyaki technique gets easier with practice. Keep the heat moderate so layers set slowly and roll smoothly.
  • Leftover sushi rice can be gently reheated with a sprinkle of water and a short microwave burst covered to revive stickiness.

Storage

Store components separately for best texture: rice up to 24 hours refrigerated (reheat gently), tamagoyaki 2 days, caramelized vegetables 2–3 days. Reheat vegetables briefly in a pan to restore gloss.
