What is Cocoa Mass?

Cocoa mass, also known as cocoa liquor, is the main ingredient in chocolate. But don’t worry, it doesn't mean it's a liquid like juice!

How is Chocolate Made?

  1. Cocoa Beans: Chocolate starts with cocoa beans, which come from cocoa trees. These beans are harvested when they are ripe.
  2. Fermentation: The harvested beans are then fermented, which means they are left to sit for a while to develop their flavor.
  3. Drying: After fermentation, the beans are spread out to dry in the sun.
  4. Roasting: Once dried, the beans are roasted. This makes them brown and brings out their chocolatey smell!
  5. Cracking: After roasting, the beans are cracked open to reveal the cocoa nibs inside.
  6. Grinding: The nibs are then ground into a thick paste called cocoa mass. This is the key ingredient of chocolate!
  7. Processing: The cocoa mass can be separated into cocoa butter (the fat) and cocoa powder (the solid). To make chocolate, sugar, milk, and sometimes other flavors are added to the cocoa mass.
