Cake Decorating Mission 1: Taming the Liquid Foam

Materials Needed

• For the "Magic Practice Foam": One container of Wilton "Practice Board" Decorator Foam OR ingredients for a DIY version (e.g., meringue powder, water, powdered sugar).

Lesson Activities

Part 1: The Decorator's Toolkit (15 minutes)

1. Tool Introduction: Lay out all the tools. Pick up each one and explain its "superpower."
   • Spatula: The "Organizer." Its job is to scrape the bowl and guide the foam into the piping bag.
   • Piping Bag: The "Power Pack." It holds the foam and delivers it with pressure.
   • Coupler: The "Quick-Change Artist." This two-part tool lets you switch piping tips without emptying the bag.
   • Piping Tips: The "Shapers." Each one creates a different, beautiful design. Show how the shape of the tip's opening relates to the design it will make.
2. Activity - "Tool Assembly Challenge": Time Jannymae to see how quickly she can assemble a piping bag.
   1. Drop the main part of the coupler into the empty bag.
   2. Push it to the bottom and mark where to cut.
   3. Remove coupler, cut the bag at the mark.
   4. Push the coupler back through so it fits snugly in the opening.
   5. Place a piping tip on the outside of the coupler.
   6. Screw on the coupler ring to lock the tip in place.
   Celebrate her success! This is a key skill.

Part 2: Creating the Magic Foam (15 minutes)

Goal: To learn how to prepare the practice medium.

1. The Recipe: Follow the directions on the liquid foam container or your DIY recipe. Explain what you're doing at each step. For example, "We are using a whisk to incorporate lots of air into the mixture. That's what will make it light and stiff, perfect for holding its shape."
2. Consistency Check: Show Jannymae the goal consistency: "stiff peaks." This means when you lift the whisk out of the foam, the peak that forms stands straight up or curls over just slightly at the tip. Let her feel the texture with the spatula.
3. Loading the Bag: Demonstrate the best way to fill the piping bag without making a mess.
   • Fold down the top of the bag to create a "cuff."
   • Place the bag in a tall drinking glass to hold it steady.
   • Use the spatula to scoop foam into the bag, filling it about halfway.
   • Unfold the cuff, twist the top of the bag shut, and secure with a tie or rubber band. This keeps the foam from squeezing out the wrong end!

Part 3: Basic Training - Decorator's Drills (20 minutes)

Goal: To develop muscle memory and control.

1. Setup: Clip a sheet of parchment paper onto the clipboard. If you have practice sheets, place one underneath the parchment paper.
2. Holding the Bag: Show Jannymae the proper grip. The dominant hand squeezes from the top to apply pressure, while the other hand guides the tip.
3. Drill #1 - Straight Lines (with Round Tip): The mission is to pipe straight, even lines. The secret is to hold the tip slightly above the surface and let the line "fall" onto the paper, guiding it as it goes. Challenge her to make lines of different thicknesses by varying her speed.
4. Drill #2 - Perfect Stars (with Star Tip): The mission is to create a field of stars. The technique is: hold the bag at a 90-degree angle to the surface, squeeze, stop squeezing, and then lift straight up. Challenge her to make them all the same size.
5. Drill #3 - The Shell Shuffle (with Star Tip): This is a classic border. The technique is: Squeeze to create a small mound, then ease up on the pressure as you pull the tip down and away, creating a "tail." Start the next shell right where the last one's tail ended.
6. Scrape and Repeat: The best part about practice foam! When the parchment is full, use the spatula to scrape all the foam off and put it back in the bowl to reuse. Wipe the parchment clean and go again!

Part 4: Decorator's Freestyle (10 minutes)

Goal: To apply the learned skills creatively.

• The Challenge: Announce, "Now you are the head decorator! Your mission is to use the skills you just learned—lines, stars, and shells—to create your own unique design on the parchment paper. You can combine them, make patterns, or even write your name. There are no mistakes, only creative choices!"
• Give Jannymae full control. Encourage her to try swapping the tips using the coupler.

Part 5: Clean-Up & Review (5 minutes)

Goal: To learn proper tool care and reflect on the lesson.

1. Deconstruction: Show how to take apart the piping bag and wash the tips, coupler, and spatula thoroughly. Explain that clean tools are essential for a good baker.
2. Reflection: While cleaning up, ask fun questions:
   • "What was your favorite technique to practice today?"
   • "What was the trickiest part?"
   • "What design are you excited to try on a real cake someday?"

Differentiation and Inclusivity

• For Extra Support: If Jannymae is struggling with pressure control, start with a larger piping tip (like a Wilton 1M open star). A larger opening is more forgiving. You can also gently guide her hand for the first few attempts to help her feel the right motion.
• For an Extra Challenge (Extension): If Jannymae masters the basics quickly, introduce a petal tip. Challenge her to create a simple ribbon or a basic ruffle. Or, have her try piping a two-toned swirl by putting two different colors of foam (use food coloring) side-by-side in the piping bag.
