Creating a Fall Garden: Seeds, Soil, and Winter Planning
Big-Picture Goals
By the end of this four-week unit, the learner will be able to:
- Explain why fall can be a good time to grow certain vegetables.
- Plant and care for carrots, onions, garlic, and sweet snap peas.

Materials for the Unit
- Garden space, raised bed, large containers, or grow bags
- Carrot, onion, garlic, and sweet snap pea seeds or planting pieces
- Healthy garden soil or potting soil
- Coco coir and a container for soaking or mixing it
- Small hand shovel or trowel, gardening gloves, and watering can
- Ruler or measuring tape and plant labels
- Garden journal, pencils, crayons, colored pencils, and graph paper
- Access to University of Arizona and Yavapai County Cooperative Extension garden articles
- Computer, tablet, or printed articles
- Magnifying glass, optional
- Straw, dry leaves, or another safe mulch for winter protection

Success Criteria for the Unit
The learner is successful when they can:
- Label the garden area and explain what will be planted in each section.
- Plant seeds or bulbs at an appropriate depth and spacing using a label or diagram.
- Explain that soil needs water, air, nutrients, and space for roots.
- Use coco coir correctly as part of a soil mixture rather than as a complete replacement for soil.
- Record at least three careful observations and make a reasonable garden prediction.
- Use evidence from at least two extension resources in the final garden plan.
Week 1: Understanding Fall Gardens and Planning the Space
Day 1: What Makes a Fall Garden?
Hook: Ask, “Could a garden still grow after summer ends?” Look at pictures or examples of fall vegetables and discuss how cooler temperatures, shorter days, water, and sunlight affect plants.
I Do: Model how to make a garden journal entry. We Do: Sort the planned crops into categories such as root, bulb, and vine plants. You Do: Draw or describe what you think a fall garden will look like.
Day 2: Reading a Garden Resource
Read a short, age-appropriate section from a University of Arizona or Yavapai County Cooperative Extension article about fall gardening. Pause to define words such as climate, season, soil, and germination.
Use think-pair-share, or discuss with an adult, one fact, one question, and one idea from the article. The learner records two useful facts in the garden journal.
Day 3: Choosing the Garden Location
I Do: Model how to observe sunlight, wind, drainage, and access to water. We Do: Walk around the yard or examine possible containers and make observations.
You Do: Choose a garden location and create a simple map showing where carrots, onions, garlic, and snap peas will grow. If outdoor space is limited, design a container garden.
Day 4: Planning Spacing and Planting Dates
Examine seed packets or reliable extension information to compare planting depth, spacing, and expected sprouting time. Create a planting chart with the crop name, planting method, depth, spacing, and care needs.
The learner explains their choices aloud and checks whether each crop has enough room. An adult may help read directions, but the learner should make the chart and explain it.
Day 5: Preparing to Plant
Gather tools, inspect the garden area, remove large weeds or debris, and mark the planting sections. Practice making shallow rows and holes in a small tray or unused soil before planting.
Review safe tool use: carry tools pointed down, wash hands after gardening, and ask before using unfamiliar materials. End by making a prediction about which crop will sprout first.
Week 1 Check for Understanding
Ask the learner to point to the garden map and explain where each crop will grow, why the location was chosen, and one difference between planting a carrot seed, an onion, a garlic clove, and a snap pea seed.
Week 2: Improving Soil with Coco Coir and Planting Fall Crops
Day 1: Exploring Soil
Examine a handful of soil and discuss what plants need from it: support, water, air, and nutrients. Compare dry soil, moist soil, and coco coir by looking, touching, and describing their textures.
I Do: Model a simple soil observation. We Do: Test whether water moves through different samples. You Do: Record a drawing and three describing words in the journal.
Day 2: Replenishing Soil with Coco Coir
Explain that coco coir is a material made from coconut husks that can help soil hold moisture and stay loose. Demonstrate soaking compressed coco coir according to the package directions, then mixing a small amount with garden soil.
Discuss why coco coir should be mixed with soil or compost instead of being used as the only growing material. The learner helps prepare the mixture and writes a simple “before and after” soil description.
Day 3: Planting Carrots and Onions
I Do: Model making a shallow row, sprinkling carrot seeds, covering them lightly, and watering gently. Model placing onion starts or seeds at the correct depth according to the package or extension guidance.
We Do: Measure spacing together. You Do: Plant and label the carrot and onion sections, then make a journal entry showing what was done.
Day 4: Planting Garlic
Examine a garlic bulb and identify the pointed end and the wider root end. Plant individual cloves with the pointed end facing upward, following the recommended depth and spacing on the planting instructions.
The learner creates a plant label and predicts what will happen to the roots during winter. Water the area gently without washing away the soil.
Day 5: Garden Care Routine
Create a simple care routine that includes checking soil moisture, observing weather, looking for weeds, and recording changes. Practice checking moisture with a finger rather than watering automatically.
Choose one way to track the garden: a paper calendar, a digital note, or a picture chart. The learner completes the first care check and gives specific feedback about what the garden needs next.
Week 2 Check for Understanding
The learner demonstrates how to plant a seed or garlic clove, explains the purpose of coco coir, and answers: “Why should we water gently?” Look for correct planting direction, reasonable spacing, clear labels, and a recorded observation.
Week 3: Winterizing Sweet Snap Peas and Caring for Young Plants
Day 1: Learning About Sweet Snap Peas
Look at a snap pea seed and discuss what a seed needs to begin growing. Read the seed packet or an extension resource to learn about planting depth, spacing, support, and cool-weather growth.
The learner draws the life cycle of a pea from seed to plant. Discuss how some seeds can rest in the soil during cold weather and begin growing when conditions are right.
Day 2: Planting Sweet Snap Peas
I Do: Model how to make holes, place seeds, cover them, and label the row. We Do: Measure the spacing and decide where a trellis, sticks, or string could support the plants.
You Do: Plant the sweet snap pea seeds and create a journal diagram. If planting outdoors is not possible, use a container and describe how the plan would change.
Day 3: Winterizing the Pea Seeds
Explain that winterizing means preparing plants or seeds to stay safe during cold weather. Discuss using a light layer of straw or dry leaves as mulch, while keeping the layer loose enough for water and air to reach the soil.
The learner helps cover the pea area and places a label nearby. Make a prediction about how the mulch may change the soil temperature and moisture.
Day 4: Reading and Reviewing Extension Information
Read a second article or selected section from the University of Arizona or Yavapai County Cooperative Extension. Use a three-column note sheet: “What the article says,” “What we see in our garden,” and “What we should try.”
Discuss whether the article supports or changes the garden plan. The learner identifies one piece of evidence that helps explain how to care for fall or winter crops.
Day 5: Garden Observation and Problem Solving
Inspect the garden for moisture, weeds, insects, animal disturbance, or signs of sprouting. Use a magnifying glass if available, and record observations with words, numbers, or drawings.
Choose one garden problem to solve, such as soil drying out or birds disturbing seeds. The learner proposes a solution and explains why it might work.
Week 3 Check for Understanding
Ask the learner to explain winterizing in their own words, show how the pea seeds were protected, and use one fact from an extension article to justify the care plan. Check that the learner can distinguish an observation from a prediction.
Week 4: Monitoring Growth, Using Evidence, and Planning Ahead
Day 1: Measuring and Recording Growth
Review the garden journal and look for changes in soil, sprouts, leaves, or weather. Model how to measure a plant or mark a row without disturbing it.
The learner records at least three observations, including one measurement or count. If nothing has sprouted, the learner records that fact and explains what conditions may still be needed.
Day 2: Comparing the Four Crops
Create a comparison chart for carrots, onions, garlic, and snap peas. Include the plant part we eat, planting method, preferred conditions, and one care need.
Use a choice activity: make a labeled poster, record a short explanation, or build a table in a digital document. The learner explains which crop may need the most patience and why.
Day 3: Garden Data and Predictions
Count sprouts, measure growth, or compare moisture in different sections of the garden. Make a simple bar graph or picture graph showing one set of garden data.
The learner uses the data to make a prediction, such as which crop may grow first or which area may need more water. An adult gives feedback using the questions: “What is your evidence?” and “What could you check next?”
Day 4: Creating the Final Fall Garden Plan
The learner prepares a final plan containing a labeled garden map, planting instructions, soil-mixing notes, winterizing steps, and a weekly care schedule. Include at least two facts from University of Arizona or Yavapai County Cooperative Extension resources.
I Do: Model how to connect a fact to a garden decision. We Do: Check the plan for missing details. You Do: Complete the plan independently or with limited support.
Day 5: Garden Presentation and Reflection
The learner presents the garden plan to an adult, family member, class, or small group. The presentation should explain what was planted, how coco coir was used, how the peas were winterized, and what the learner will observe next.
Finish with a reflection: “One thing I learned,” “One challenge I solved,” and “One question I still have.” Celebrate careful observation and improvement, not just successful sprouting.
Week 4 Check for Understanding
Ask the learner to use their garden journal and final plan to explain one decision with evidence, interpret their graph or observations, and describe the next three steps for caring for the garden.
End-of-Unit Project and Assessment
Fall Garden Scientist Portfolio
The learner creates and presents a portfolio containing:
- A labeled fall garden map or container-garden design.
- A planting chart for carrots, onions, garlic, and sweet snap peas.
- A short explanation or diagram showing how coco coir was added to the soil.
- A winterizing plan for the sweet snap peas, including mulch and care steps.
- At least three garden observations, one measurement or count, and one graph or data display.
- Two or more useful facts from University of Arizona or Yavapai County Cooperative Extension readings.
- A future-care schedule and a written reflection.
