Instructions

Today we’re going to explore the science of baking by making delicious cinnamon rolls using yeast dough. Follow the steps below and learn about the role of gluten and yeast in our dough!

Ingredients:

  • 2 ¼ cups all-purpose flour
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • ¼ cup sugar
  • ½ teaspoon salt
  • ½ cup milk (warm)
  • ¼ cup unsalted butter (melted)
  • 1 large egg
  • ¼ cup brown sugar (for filling)
  • 2 tablespoons ground cinnamon (for filling)
  • 1 tablespoon butter (softened, for filling)

Step-by-step Instructions:

  1. Activate the Yeast: In a small bowl, combine warm milk (not hot!) and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes frothy.
  2. Mix the Dough: In a large bowl, combine 2 cups of flour and salt. Create a well in the center and pour in the melted butter, egg, and activated yeast mixture. Stir until it all comes together.
  3. Knead the Dough: Turn the dough onto a floured surface and knead for about 8-10 minutes until it’s smooth and elastic.
  4. First Rise: Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
  5. Prepare Filling: While the dough is rising, mix the brown sugar and ground cinnamon in a small bowl.
  6. Shape the Rolls: Once risen, punch down the dough and roll it out into a rectangle (approximately 12x8 inches). Spread softened butter over the dough, then sprinkle the cinnamon-sugar mixture evenly on top. Roll up tightly from the long side.
  7. Cut and Second Rise: Cut the rolled dough into 1-inch slices and place them in a greased baking pan. Cover and let rise again for about 30 minutes.
  8. Bake: Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown.
  9. Enjoy! Allow your cinnamon rolls to cool slightly, then enjoy them warm!

Reflection Questions:

  1. What did you learn about the role of gluten in the dough?
  2. How does yeast fermentation contribute to the texture and flavor of the cinnamon rolls?

Happy baking! Remember, every great baker learns from both their successes and their mistakes!
