Objective

By the end of this lesson, the student will understand the basics of baking and icing techniques, including how to follow a recipe, measure ingredients accurately, and decorate baked goods using various icing methods. The student will also gain confidence in their baking abilities and creativity in decorating.

Materials and Prep

  • Professional Baking 6th Edition textbook
  • Measuring cups and spoons
  • Mixing bowls
  • Whisk and spatula
  • Oven and baking sheets
  • Ingredients for a simple cake (flour, sugar, eggs, butter, baking powder, milk)
  • Ingredients for icing (powdered sugar, butter, milk, vanilla extract)
  • Food coloring (optional)
  • Decorative tools (piping bags, tips, sprinkles)

Before the lesson, ensure that the kitchen is clean and all ingredients are measured out. Familiarize yourself with the baking techniques discussed in the Professional Baking textbook.

Activities

  • Reading and Discussion: Begin by reading a section from the Professional Baking textbook about the science of baking. Discuss why each ingredient is important in a cake recipe.
  • Baking a Cake: Follow a simple cake recipe from the textbook. The student will practice measuring ingredients and mixing them according to the instructions.
  • Icing Practice: Once the cake is baked and cooled, the student will learn how to make icing and practice spreading it on the cake. Encourage them to experiment with colors and designs.
  • Decorating Challenge: Have a fun decorating competition where the student creates their own design on a cupcake or a piece of the cake using icing, sprinkles, and other decorations.
