Objective
By the end of this lesson, Sky will have successfully baked a loaf of sourdough bread from scratch, understanding the fermentation process and how to cultivate a sourdough starter. Sky will also gain confidence in baking techniques and develop a deeper appreciation for the art of bread-making.
Materials and Prep
- All-purpose flour (or bread flour)
- Water (preferably filtered or bottled)
- Salt
- Sourdough starter (can be homemade or store-bought)
- A large mixing bowl
- A wooden spoon or spatula
- A kitchen scale (optional but recommended for accurate measurements)
- A clean kitchen towel or plastic wrap
- A baking sheet or Dutch oven
- A cooling rack
Before starting, ensure that the sourdough starter is active and bubbly. This may require feeding it a few hours prior to baking. Familiarize yourself with the basic steps of sourdough bread-making to make the process smoother.
Activities
-
Understanding Sourdough Starter:
Begin by discussing what a sourdough starter is and how it works. Sky can observe the texture and smell of the starter, noting how it changes over time. This will help in understanding the fermentation process.
-
Mixing Ingredients:
Sky will measure out the flour, water, and salt, then combine them in a bowl. This hands-on activity will help Sky learn about the ratios and the importance of each ingredient in the bread-making process.
-
Kneading the Dough:
After mixing, Sky will knead the dough, developing gluten and texture. This can be a fun and physical part of the lesson, allowing Sky to feel the changes in the dough as it becomes more elastic.
-
Shaping and Scoring:
Once the dough has risen, Sky will shape it into a loaf and learn how to score the top before baking. This not only helps with the aesthetics but also allows for controlled expansion during baking.
-
Baking and Tasting:
Finally, Sky will bake the bread and then taste the finished product. This is the rewarding part of the process where all the hard work pays off. Discussing the flavor and texture will help solidify the learning experience.
Talking Points
- "Did you know that sourdough bread has been made for thousands of years? It’s one of the oldest forms of leavened bread!"
- "The sourdough starter is basically a mix of flour and water that captures wild yeast and bacteria from the environment. It’s like a pet that you need to feed!"
- "Kneading is crucial because it develops gluten, which gives the bread its structure. The more you knead, the better your bread will be!"
- "Scoring the dough before baking not only looks cool but also helps control how the bread expands in the oven."
- "Baking is a science, but it’s also an art. Don’t be afraid to experiment with different ingredients or techniques once you get the hang of it!"
- "The smell of baking bread is one of the best scents in the world. What do you think makes it so comforting?"
