Objective

By the end of this lesson, the student will understand the basic principles of food processing, including methods of preservation, safety measures, and the impact of food processing on nutrition and flavor. The student will also engage in hands-on activities to reinforce these concepts.

Materials and Prep

  • Fresh fruits and vegetables (e.g., apples, carrots, tomatoes)
  • Basic kitchen tools (knife, cutting board, pots, and pans)
  • Containers for storage (jars, bags, etc.)
  • Stove or heat source for cooking
  • Access to a refrigerator
  • Notebook for taking notes

Before starting the lesson, ensure that all materials are gathered and that the kitchen area is clean and safe for cooking. Discuss basic kitchen safety rules with the student.

Activities

  • Fruit and Vegetable Preservation:

    The student will learn about different preservation methods such as canning, freezing, and drying. They will choose one type of fruit or vegetable and practice one preservation method, documenting the process.

  • Cooking Experiment:

    The student will prepare a simple recipe using the preserved items. This could be a jam, pickles, or a soup, allowing them to explore how processing affects flavor and texture.

  • Taste Test Challenge:

    The student will conduct a taste test comparing fresh versus processed versions of the same food item. They will record their observations on taste, texture, and aroma.
